Amber’s Exclusive 6 Hands Dinner with Den and Florilège

The Landmark Mandarin Oriental, Hong Kong’s two Michelin-starred Culinary Director, chef Richard Ekkebus is pleased to announce an unprecedented collaborative ” Six Hands Dinner ” on 26 September 2017, featuring award-winning Japanese chefs from two of Tokyo’s most innovative dining establishments chef Hiroyasu Kawate from Florilège and Den’s chef Zaiyu Hasegawa.
The unique series of Friends of Amber dinners held at the hotel’s fine dining Amber restaurant has previously welcomed a who’s who of culinary masters including chef Martin Benn of Sydney’s Sepia, Singapore’s André Chiang, legendary Spanish master Ferran Adrià and the Korean-American chef Corey Lee.
Although the event usually involves one other chef who, together with chef Ekkebus, presents meticulously crafted menus that lead guests through a gastronomic journey of excellence, this unusual collaboration features two of Tokyo’s most dynamic award-winning contemporary chefs renowned for their signature style, imagination and craftsmanship.
Chef Zaiyu Hasegawa of Den, ranked no.11 on Asia’s 50 Best Restaurants 2017 List, is famed for his innovative interpretation of traditional Japanese culinary traditions, reflecting seasonal ingredients and Japanese culture with a unique contemporary twist.
Chef Hiroyasu Kawate of Florilège, ranked no.14 on Asia’s 50 Best Restaurants 2017 List, comes from family steeped in the culinary world. His inventive take on classic French food is legendary with local ingredients and Japanese flavours taking a starring role.
The 12-course, Six Hands Dinner (HKD2,688+10% service charge) will see the three culinary giants join forces to create an unforgettable experience for an exclusive one-night only collaborative dinner on 26 September 2017.
The menu is also available as a wine pairing tasting menu with dishes enhanced by a selection of wines by our head wine sommelier John Chan.
